Ingredients
3.0 thigh, bone and skin removed Chicken Thigh1.0 cup Great Value Diced Tomatoes (drained)1.5 cup Beans, black drained and rinsed1.0 cup Orzo Pasta2.5 cup (8 fl oz) Chicken Broth1.0 tsp Onion powder1.0 cup, chopped Onions, raw0.25 cup Cheese - Fit & Active 2% Mexican Blend Shredded Cheese (Made with 2% Milk)
Directions
Cook chicken in olive oil until thoroughly cooked in skillet. Add broth, beans, tomato and orzo and blend. Add seasoning, I recommend onion powder, cumin, Tony Chachero's and tabasco. Cook til it reaches boiling then simmer until it thickens. Mix in about a 1/2 cup of cheese. Serve topped with guacamole, pico de gallo, salsa or extra cheese. Enjoy!
