Meatballs in hot pepper sauce

Ingredients
3 medium sweet peppers diced1 large onion diced1 tsp olive oil400g ground beef extra lean200g mixed grain bread ( approx 4 thick slice) - made into breadcrumbs (i use a hand blender)1 egg white1 tbsp chili powdersalt and ground black pepper to season

Sauce
Heat a pan to a medium temperature with the olive oil in, add the diced onion and fry for 3 - 5 minutes, while you dice the peppers. Once peppers diced add them to the fried onion. Fry for about 3 minutes then place a lid on the pan and turn the heat down low. You do not want to brown the onion or pepper but soften them. About 10 minutes is enough time and this allows you to make the meatballs.
Meatballs
Make the bread into crumbs (I use a hand blender) and mix with the ground beef. Add the egg white to make a slightly sticky mixture. I like small meatballs so this mixture will make about 40. Remember to take the pepper and onion mix off the heat. Once made dry fry the meatballs on a low to medium temperature, I find even though the beef is extra lean there is enough fat to stop them sticking but keep an eye on them. Turn the meatballs occasionally until cooked through.

While cooking the meatballs you need to blend the onion and pepper mix, adding a little hot water, I usually add about 4 tbsp but you will need to see if this is enough for you. Then add the chili powder and salt and pepper to taste.

Add the sauce to the cooked meatballs for a few minutes and serve with salad. There is not a lot of sauce but I find this enough.

You could also serve with rice, pasta or other cooked grains, but remember to add the calories.

I have frozen this mixture but I freeze the meatballs and sauce separately.
