Sugar Free Small Batch Cherry Jam

6.8 oz pitted sweet cherries1/2 cup water1 tbsp lemon juice1 tsp calcium water (Pomona's)1/3 cup Splenda6 tsp Pure-Le Fibre FiberRiffic 3/4 tsp Pomona's Pectin
Pit the cherries and finely chop them.
Transfer to a pot and add the water, lemon juice and calcium water.
In another bowl, mix the Splenda, FiberRiffic and pectin until well combined.
Bring the fruit mixture to a boil, stirring often. Cook 5 minutes over medium-high heat.
Add pectin-sweetener.
Stir vigorously 1-2 min. to dissolve pectin while mixture returns to a full boil. Remove from heat.
Serving Size: ~1 cup, 8 (2 tbsp) servings
