Mocha Meringues

3 serving Egg white, large 1 cup Granulated Sugar 0.5 tsp Cream Of Tartar 1 dash Salt .25 cup Cocoa, dry powder, unsweetened 1 TBS instant coffee (extra finely ground)
Preheat oven to 350 degrees. Place parchment paper on cookie sheets.
Add salt to egg whites, and beat til light peaks form. A dd cream of tartar, and then add sugar 1 TBS at a time, beating continuously., until really stiff peaks form. Mix the cocoa powder and super finely ground instant coffee (or expresso powder as originally called for) and mix this into the meringue.
Using spoon, or pastry bag with star tip, shape 24 cookies onto paper lined cookie sheets. Bake 35 minutes, then turn off oven, and let meringues sit in the oven to continue drying out. When oven is room temp, remove and store in airtight container.
