Chicken Vodka Lasagna

Ingredients
2 boneless, skinless chicken breasts1/2 large onion, rough chop1 Tbsp garlic1 Tbsp basil (dried)some parsleys&pseveral cups of water1/2 large onion1 poblano pepper1 Tbsp garlic, minced2 tsp red pepper1 tsp basil2 tsp parsleys&p8 oz. sliced mushrooms1 jar Emeril's Vodka Sauce3 cups cottage cheese1 eggfresh chopped parsley7 or 8 cooked lasagna noodles3 cups mozzarella cheese
Directions
Put the first 7 ingredients in a large stock pot and bring to a boil. Turn heat to low and cover. Simmer about 25 minutes until chicken is cooked through and tender. Drain water (and save the broth) and chop or shred the chicken. Set aside.

In a large heated pot, spray pam and add onions, peppers, garlic, and spices. Sautee until transparent. Add mushrooms, and continue sautee until mushrooms are cooked to your liking. Add vodka sauce and chopped chicken, and simmer about 10-15 minutes.

In a small bowl, combine cottage cheese, parsley, and egg with a wisk until mixed well.

Now for assembly......
spray a 9X11 casserole dish. Place 3 or 4 noodles on bottom. Spread 1/2 of your cottage cheese mixture evenly across top of noodles. Ladle in 1/2 of your sauce mixture on top of cheese. Sprinkle 1 1/2 cups mozzarella cheese on top. Repeat.
Bake at 350 degrees until cheese is bubbly, about 20-30 minutes.
