Julie's Homemade Eggplant Lasagna

Ingredients
0.25 cup Progresso Bread Crumbs - Italian Style1.0 serving Basic Baked Eggplant (see recipe)1.5 serving Julie's Chunky Sauce (see recipe)1.0 serving 7 slices Bacon Cheddar Cheese big slice2.0 tbsp 2 tbsp. parmesan cheese
Directions
Take the baked eggplant & line the bottom of a small casserole dish, put a layer of Julie's Chunky Sauce (use half), layer of the cheese. Then repeat with each layer, top with bread crumbs & parmesan cheese. Bake at 400 degrees until bread crumbs are brown. Let cool & serve. The eggplant & chunky sauce can be prepared ahead of time. Serving Size: Makes 4 servings
