Indian Rice Pudding (Kheer)

6 cups whole milk1 1/2 cups cooked basmati rice3 tbsp granulated sugardash of sea salt1 tbsp ground cinnamon1 tbsp ground nutmeg
In a large sauce pan, bring milk & cinnamon to a GENTLE boil. Reduce the heat to VERY low, letting the milk cool. About 20 min.
Add the sugar, salt, & rice, allowing the mixture to thicken over the low heat.
Pour into serving bowls. Allow to cool to room temperature, and refridgerate for several hours untill chilled through.
Garnish with nutmeg.
Makes 6.
