No-Knead Italian Sesame Seed Dutch Toaster Oven Loaf Bread

14 oz water3.5 cup bread flour2 tbsp wheat germ3 tbsp Sesame Seeds, (divided - 1tbsp to dough, 2 tbsp after proof)1 tbsp Olive Oil1 tsp yeast1.5 tsp Salt Cooking spray
In a bowl mix all ingredients together (reserving 2 tbsp of sesame seeds to use when forming dough), and using the handle of a large plastic spoon to incorporate all the water into the flour mixture until a dough ball starts to form. Using a rubber spatula, scrape down sides of bowl until all dough is incorporated into the ball. Cover with plastic wrap and allow to sit on your countertop for 12-18 hours.
De-gas the bread dough: Using the handle of your plastic spoon an swirling the dough around in the bowl until it has loosened from the sides. Add the reserved sesame seed and swirl around again until all seeds are evenly distributed on the outside of the dough. Sprinkle enough additional flour onto the dough and swirl again until the dough releases from sides of bowl. Dump into a loaf pan that has been sprayed with nonstick spray. Don't worry about it not conforming exactly to the pan -- it will even out with proofing time. Make a poor man's Dutch oven by spraying another loaf pan with nonstick spray and inverting over the top - clipping ends with stationary clips. Allow to proof like this for 30 minutes.
The last 10 minutes of your proofing time, heat your toaster oven to 400 degrees. After proofing time is up and your toaster oven in preheated, place your poor man Dutch oven into the toaster oven to bake for 40 minutes.
After baking 40 minutes, remove the top of the Dutch oven and bake with the lid off for an additional 8-12 minutes depending on the browning you desire.
Remove from oven, remove from pan and allow to set until completely cooled. Slice cooled bread into 12 slices.
If desired, serve with dipping oil made of EVOO, dried oregano, dried basil, salt and pepper but remember to add that addition into your nutritional count.
