Citrus Grilled Chicken Salad

Ingredients
2 chicken breasts (4 oz)1 cup canned mandarin oranges (I use the ones in light syrup)1 cup pineapple tidbitsIceburg letttuce (amount to your preference)]1 small peeled cucumber sliced or choppedYou may use Honey mustard, ranch or any dressing you prefer to taste
Directions
Grill the chicken on a George Foreman grill (or one like it)
While the chicken is cooking slice the cucumber and and letttuce, drain the fruit before mixing it in.
Once the chicken is cooked mis all the ingredients together in a salad bowl. You can also add grated cheddar cheese if you like cheese in your salads.
Makes approx. 8 1 cup servings
