Sweet potato street tacos (Fitgirl recipe)

Ingredients
2 tortilla, medium (approx 6" di Corn Tortillas 1.5 oz Mozzarella Cheese, whole milk .5 cup, cubes Sweet potato 1 cup Baby Spinach (raw) 2 tbsp chopped Onions, raw .33 tbsp Extra Virgin Olive Oil .5 cup, pieces or slices Mushrooms, fresh .25 cup, pureed Avocados, California (Haas)
Directions
Saute mushrooms and onions in cooking spray for 2-3 min.
Add cooked sweet potatoes in small cubes, olive oil, and spices (cumin, oregano, cayenne and garlic).
Add splash of water and cook til potatoes are brown.
Add spinach and cook til wilted. Remove from heat.
Heat or toast tortillas.
Add potato mixture, cheese, avocado slices or guac, salsa and hot sauce.
