In a wok or frying pan add two tablespoons of coconut oil.
Cook over a medium heat. Add 1/4 chopped onion to oil and cook a few min.
Add 1 tsp ginger ( I used the paste in a tube)
Mince 1 clove of garlic and add to the pan.
Add one pound of sliced beef. ( I actually found a package of thin slice beef steak that I used, I just cut it in strips.
Let brown for a few moments and stir.
Add 4 cups of broccoli florets to the mixture.
Add 1/4 cup coconut aminos to the mix. (Do not use soy sauce, tamari sauce, or regular Braggs. Soy is not Keto)
Cook the broccoli to taste. .
Some might want to add a teaspoon of swerve to the mix if you want to bring out some sweet flavor. I did to see how it was for my husband. It doesn't need it. I have left it in for nutritional info.
Serve over riced cauliflower.
Pour the extra sauce on the cauliflower.
Simple Fried Cauliflower:
in a large pan, heat some sesame oil
once hot, add riced cauliflower and cook for about 10 min. move the cauliflower to the sides and in the middle of the pan add 1 clove minced garlic & 1/2 tsp ginger. saute and stir into cauliflower. Season w/salt & Pepper. Cook another 10 min.
in a small bowl whisk eggs. move cauliflower to the sides again and pour the eggs into the center of the pan. scramble the eggs. once the eggs are almost done stir all the cauliflower mixture together into the eggs so the eggs are well dispersed. Cook until eggs are fully cooked and rice is ready.
Serve topped with Beef & Broccoli or any other Asian inspired meal.
