Turkey Quesadillas

Ingredients
1 lb ground turkey1.5 C reduced fat shredded colby jack or taco cheese1 package taco seasoning1 medium tomato diced1 medium green bell pepper diced3/4 C water8 whole wheat tortillas
Directions
Cook ground turkey in a non-stick skillet until no longer pink. In the last 2-3 minutes add in diced tomato and green pepper.

Drain off all liquid from cooking. Add 3/4 C water and taco seasoning to meat and vegetable mixture. Mix thoroughly. Divide meat mixture and cheese among 8 tortillas. Fold tortilla over meat & cheese. Cook on medium heat on each side until lightly golden brown.

Serve with sour cream, guacamole or salsa if desired. (They're not figured into the calculations.)
