Tortellini Soup with Chicken

2 cans (14 oz. each) fat-free, low-sodium chicken broth3 cups water2 cloves garlic, minced1 (14 oz.) can diced tomatoes, drainedParmesan rind (optional)8 oz. boneless, skinless chicken breast, cut into bite-sized pieces1 large package refrigerated cheese-filled tortellini1/2 package baby spinach
In 3-quart saucepan, mix broth, water, tomatoes, Parmesan (if desired) and garlic. Heat to boiling. Stir in chicken and tortellini. Reduce heat to medium; simmer uncovered 4 minutes.
Add spinach and; cook 5 minutes, stirring occasionally, until spinach is wilted, tortellini is tender and chicken is no longer pink in center. If desired, season to taste with pepper.
