Summer Squash Croquettes

Ingredients
3 medium Summer Squash (1 1/4 lbs), chopped 0.5 cup, chopped Onions, raw 4 oz Bread crumbs, dry, grated, seasoned 2 large Egg, fresh, whole, raw 0.75 tsp Salt 0.5 tsp Granulated Sugar 0.25 cup Yellow Cornmeal 30 grams Bacon grease
Directions
Steam squash and onion until tender; drain and mash. Mix with all ingredients except cornmeal and grease. Chill 3 hours. Form into patties; roll in cornmeal, and fry until fairly firm and golden. Serving Size: 1 croquette

    I haven't made this recipe for years- I forgot how delicious these are, especially hot out of the pan! Three make a filling dinner entree. - 8/20/17
