SP_Stepf's Low-Fat (Vegan) Ranch Dressing

Ingredients
1/2 cup soy milk1/2 cup vegan mayonnaise3 T red wine vinegar 1/4 cup fresh herbs (I used parsley, basil, thyme, a bit of mint, and dill. Use any combination, including cilantro, oregano, etc.) 1/2 clove garlic1 t onion, choppedsalt and pepper to taste
Directions
Mix all ingredients in a blender and pulse until well blended. Add salt and pepper to taste. The flavors will get more intense as the dressing sits. Add more soy milk if the dressing is too thick or too intense. (You can also use dried onion or garlic powder in this recipe.)
