Bacon Gruyere Egg Cups

Ingredients
24 medium Egg, fresh, whole, raw 1 cup (not packed) Cottage Cheese, 2% Milkfat 1 cup, fluid (yields 2 cups whip Heavy Whipping Cream 1 cup, shredded Gruyere Cheese 6 serving Bacon - Pork 1 medium slice pan fried
Directions
Set sous vide water bath to 167*F.
Blend egg, cottage cheese, heavy cream, and gruyere in blender or in bowl with immersion blender. FIll the 12 jars equally with this mixture.
Chop the bacon and fry in saucepan until crispy. Drain and top each jar with the bacon.
Finger tighten each jar and cook in water bath at 167*F for 45 minutes.
Cool at room temp for 30 minutes. Can be refrigerated for a week. Reheat in jar (no lid) for 30-60 seconds.
