Rich Boxed Mix Cake

Ingredients
515g Boxed Yellow Cake Mix, dry1 1/3 cup Buttermilk, lowfat, close to room temperature4 large Eggs, close to room temperature1/2 cup Butter, melted and cooled slightly
Directions
Preheat oven to 350 degrees F. Lightly butter or spray a Bundt style pan or a 9 x 13 inch baking pan. Sift dry cake mix through a metal sieve into the bowl of your electric mixer to remove lumps. Lightly whisk together the buttermilk, eggs and melted butter. Using the paddle attachment for mixer, or regular beaters of hand mixer, combine the wet ingredients into the dry ingredients at low speed until combined. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared pan and tap the pan lightly on the counter 2 or 3 times to even out the batter and remove any large bubbles. Bake in the pre-heated oven for: metal Bundt pan - 35 to 45 minutes; silicone Bundt pan - 45 to 50 minutes; 13 x 9 inch pan - 35 to 40 minutes, or until cake tests clean with a toothpick and springs back when lightly pressed. Cool in pan 10 minutes, then invert onto s cooling rack to cool completely. This cake is so lovely that it needs no frosting, but like a pound cake, is delicious with berries and maybe a little sweetened whipped cream.
