1 medium (2-1/2" dia) Onions, raw 14 gram(s) Avocado Oil - Chosen Foods - 1 TBSP 1 medium whole (2-3/5" dia) Red Ripe Tomatoes 3 tsp A Taste of Thai - Red Curry Paste (by LISAG418) 1.75 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 2 cup Lentils, cooked
In a saute pan, cook finely diced onion in oil on medium heat until golden in color. Add diced tomatoes and saute for 2-3 minutes. Stir in curry paste and cook for 3 minutes. Add coconut milk (1 can) and simmer until moisture has reduced by half. Add cooked lentils and simmer until mixture thickens, approximately 5 minutes. Is nice over cooked quinoa. Pour 1 cup lentils over 1 cup quinoa.
