Banana & Sauce part3/4 med. banana1/4 c. Smucker's Sugar-Free Maple Syrup 1 Tsp Cinnamon1tsp. vanilla or butter extract (optional)1tsp. rum extract (optional)Cottage Cheese Cake (base)1/2 c. Fat-Free Cottage Cheese1Tbsp. Cheesecake,vanilla or banana cream Sugar-free fat free Jello-pudding (MIX ONLY)2-3 paks. Splenda1tsp. vanilla or butter extract (optional)(serve with Nutri-grain lo-fat waffle or home made cinnamon/splenda tortilla chips)Tortilla Chips1 Mission carb balance, whole wheat, fajita sized tortilla3 paks. Make Cottage Cheesecake base first and put in freezer for a couple of hours or so...or in fridge (depending on how cold you want it for this dish)
To make that...
Blend cottage cheese in a blender until smooth, scraping sides of blender into the center....add pudding mix and Splenda...Blend until smooth and well combined.......If needed add a splash of skim milk to make it easier to blend.
Chill.
Banana Sauce....
Cut banana in half length wise and then into small pieces.......Put in pot with syrup and extracts......Cook on low until bubbly and hot and thick. When done pour on top of the chilled cottage cheesecake base mixture.
To make chips....
Spray a baking sheet with cooking spray.....lay tortilla in center and mist slightly with spray....Sprinkle cinnamon and Splenda over it and spread to cover.....Bake at 350 degrees for 7-9 mins (keep checking)....Remove and cut into chips.
Garnish with Cool Whip free and more cinnamon & Splenda if desired
(cooking time will vary depending on what you make with it....longer for chips unless you make them in advance...None of the stuff is time consuming AT ALL though)
