Golden Mushroom Soup with Tofu

Ingredients
8 oz Trader Joe's High Protein Organic Tofu 1 cup Roland Dried Mushrooms 8 serving Gut Shot Classic 2 cup, pieces or slices Mushrooms, fresh 20 gram(s) Butter (Kerrygold) Pure Irish Gold Foil 1T=14g 1 cup, chopped Onions, raw 2 tbsp Kal Nutritional Yeast Flakes 3.0 oz Taylor Cream Sherry (by MAXRUTHVEN) 2 serving Pacific Natural Foods Organic Mushroom Broth, 1 cup
Directions
Soak the mushrooms overnight; chop mushrooms, save liquid to broth, saute mushrooms and onions in butter. Add all other ingredients to the mushroom barley soup, adjust seasoning and serve either plain or with a dollop of sour cream.
