Ingredients
* Olive Oil, 1 tbsp * Spinach, fresh, 1 package (10 oz) * *Extra Light Olive Oil, 3 tbsp * Garlic, 3 cloves * Green Peppers (bell peppers), 1 cup, chopped * Tofu, firm, 1 cup
Directions
1. Chop Tofu into small bite size cubes
2. Wash Spinach leaves
3. Chop/Smash garlic cloves
4. Heat 2 tbsp of Olive oil in a 10" cooking pan
5. When oil is hot, saute Garlic until light brown.
6. Next Green Peepers, Tofu and saute until Tofu is light brown
7. Add Spinach leaves in layers while gently flipping leaves. This step takes most attention and takes no more than 2 minutes on a hot pan.
8. Let it rest for 5 minutes and serve on large light colored plate.
