Breakfast in a Crock Pot

Ingredients
32 oz. frozen hash browns1 lb. cooked lean ham, cubed or cooked turkey bacon1 diced onion1 diced green pepper1 cup low fat cheddar cheese, shredded1/2 cup soy cheddar cheese shreds12 eggs (3 cups Egg Beaters)1 cup skim milk1 tsp. salt1 tsp. black pepper
Directions
1. Divide potatoes, ham, vegetables and cheese so you can create several layers of each in the crock pot.
2. Start with the hash browns, then ham, onions, peppers, and lastly cheese.
3. Repeat until you have several layers of each.
4. Beat eggs, milk, salt and pepper.
5. Pour this over the layers in the crock pot.
6. Cook on low for 10 to 12 hours overnight.

    I LOVED this recipe and so did the whole family. I didn't use the crock pot though because I decided to make it for dinner. I baked it for 1 hour at 350 and it was perfect. I also added mushrooms to it......I will definitaly make it again. - 3/8/10

    This was really simple to make. However I did eliminate the green pepper for my own reasons. It has a good taste however I think my first batch of this over cooked. So next time I won't cook as long. - 7/7/08

    I was dissappointed with this recipe. After reading all the comments I thought it was gonna be really good. It was not terrible but it was not as good as I thought it would be. My husband ate salsa with his and it made it taste better. I would not make this again. :P - 6/2/11

    Used turkey bacon and turkey ham (1/2 lb of each) and didn't cook this quite as long as it says. Took maybe 6-7 hours until done. Any longer and it would have burnt. Was very good. Family loved it! - 12/23/08

    Very good. I would have to agree this does not take 10 hrs to cook. Unless my crock is really hot compared to others. It took mine 6.5 hours and then I turned it down to "keep warm" - 8/18/08
