Super Moist Turkey Burgers

1 lb. all white meat ground turkey1/2 cup finely chopped carrot1/2 cup finely chopped mushrooms1/2 cup finely chopped onion1/4 cup italian style bread crumbsSpray olive oil4 sliced swiss cheese4 whole wheat hamburger buns
Spray a medium frying pan with olive oil and heat over medium heat. Add the carrots and saute until soft. Add the onion and saute till translucent. Add the mushrooms. Continue to saute till mixture is soft and reduced by 1/4. (About 5 minutes). Remove from heat and let cool. In the meantime mix the turkey and the bread crumbs, and a pinch of salt and pepper in a bowl. Add the vegetable mixture. It's easier to just use your hands to combine. If the mixture seems to be to "wet" add some more bread crumbs, but be careful not to add too much as they will dry the burgers out. Form mixture into 4 patties. Spray each patty with a little olive oil and place on a hot grill. You can also cook these in a pan. Cook for about 7 minutes on each side. Make sure to check for doneness before serving. Add a slice of swiss cheese to each patty and serve on a toasted whole wheat bun.
