Mini Omelettes

Ingredients
20 Large Brown Eggs1 tsp Chili powder 1 tsp Black Pepper 0.5 tsp Salt1 Med. Green Bell Pepper, chopped0.5 Red Onion, finely diced16 oz Breakfast Sausage, browned and crumbled2 cups Shredded Cheddar Cheese
Directions
Brown sausage, then drain and set aside to cool. In a large bowl, whisk eggs and spices together, then add other ingredients. Grease muffin tins, then ladle mixture using 1/4 measuring cup (I found this to be easiest!).

Bake @ 350˚ for 20-25 minutes or until set. These freeze well, too! :)
