Pork and Red potato meal prep pouches

Ingredients
300 grams Red Potato (halved and sliced thin)100 grams Onions, raw (chopped)1 Tablespoons Extra Virgin Olive Oil 2 Tablespoons Garlic (minced)400 grams Pork, fresh, loin, tenderloin (cubed)
Directions
Preheat oven to 375
Toss first 5 ingredients in a large bowl
Divide evenly onto 4 sheets of tin foil
Top with each potato mountain with 100 g cubed pork
Sprinkle with more seasoning or a little salt and pepper
Loosely seal up packets
Place the 4 packets on a large cookie sheet and place on center rack
Bake 35 minutes or until potatoes are tender
