Apple Crunch Muffins

Ingredients
MUFFINS1/2 cup Wholegrain Flour3/4 cup White Flour1 1/2 tsp Baking Powder1/4 tsp Cinnamon1/4 cup Splenda1/2 cup Non fat Milk1/4 cup Applesauce, unsweetened1 Egg White1 large Apple, peeled and grated (try to pick a tart apple)TOPPING1/4 cup Rolled Oats1/8 cup (@1 1/2 tblspn) smooth Peanut Butter1/8 cup Splenda
Directions
Heat oven to 350 deg F (180 deg C), spray 6 hole muffin tin.

Mix first 5 ingredients together in bowl. Mix next 4 ingredients together and mix with the dry ingredients. Do not over mix.

Fill muffin tins. Mix Topping ingredients and sprinkle over the top of muffin mixture, pressing it in the muffin a little.

Bake in oven for @ 20 minutes or until skewer comes out clean.

NOTE: If you want to substitute sugar instead of Splenda add extra 64 cals per muffin.
