Coctel de Camerones (Mexican Shrimp Coctail)

Ingredients
180 grams Shrimp, cooked (about 5 each serving) .5 tsp Baking Soda 1 dash Salt 2 tbsp Lime Juice, juice of 1 lime .5 cup, chopped Onions, raw 6 tbsp Pace Chunky Salsa - Mild 1 tbsp Ketchup, Heinz 50 grams Cilantro, raw .5 fl oz Orange Juice 1 serving Hass Avocado Fresh (1/2 of Avocado) 1 pepper Jalapeno Peppers 1 stalk, small (5" long) Celery, raw 0.5 cup slices Cucumber (with peel)
Directions
1. In large bowl, toss thawed shrimp with 1 tsp of salt and the baking soda. Place in refrigerator for 15".

2. Meanwhile, in medium bowl, stir together lime juice with onion, diced cucumber, tomato product (salsa or puree)., ketchup, cilantro, orange juice, and jalapeņo (if using).

3. In a medium pot, cook shrimp if not already cooked.

4. Drain shrimp and rinse under cold running water. If shrimp are
Large, you may want to dice into bite sized pieces.

5. Place half of shrimp and half of diced avocado in each glass.
Cover with remaining ingredients. Garnish with lemon slice and cucumber slice, and cilantro.
