Chicken and Lentil Curry

2 Chicken breasts1 large Onions2 clove Garlic 400mL Coconut Milk 4 cup Chicken stock1 cup Lentils 2 tsp Minced Ginger 2 tsp Wholegrain Mustard1 tsp Paprika 3 tsp ground tumeric.5 tsp Dried Chilli flakes.5 tsp Cumin seed 3 tsp Garam Masala 1 tbsp Curry powder 1 tsp Cinnamon, ground 1 cup Green Beans 1 cup broccoli3 medium potatoes
In a large frypan/saucepan saute onion, garlic and ginger under soft. Add the spices and cook until aromatic. Add chicken and potato and stir to cover in spice mix. Add coconut milk, stock and lentils. Simmer on a low heat for approx. 30 minutes or until potato is soft. Add beans and broccoli and heat through before serving.
