Pork Udon Stir Fry

3 oz Ground Pork 1 cup, chopped or diced Broccoli, fresh 1 tsp Ginger Root 1 serving Sweet mini peppers (3) 1 serving Green Onion (fresh-1 stalk) 1 serving Fortune Udon Noodles (by NWHURLEYGIRL)
Roughly chop mini peppers and broccoli. Slice green onion, keeping white and green parts separate. Finely chop ginger and garlic.
Stir fry peppers and broccoli in a small amount of olive oil (medium heat) until slightly softened, about 3-4 minutes. Remove to a plate and set aside. In the same pan, stir fry pork until browned. Add ginger, garlic, white parts of onion, peppers, and broccoli. Stir for about 1 minute. Stir in vinegar.
Rinse udon noodles in hot water, breaking apart. Add noodles to pan, along with 1/4 c. water and 1 tsp. soy sauce (or ~1/4 of seasoning packet, if included with noodles). Stir until well combined.
Remove from heat and stir in lime juice, salt & pepper to taste. Garnish with fresh chopped cilantro.
