Soup: Tuscan Sausage Tortellini Soup

Ingredients
1 tbsp Extra Virgin Olive Oil 1 small Onion, chopped fine10 oz pkg Thin & Trim All Natural Chicken Sausage (Sweet Italian w Red Peppers) , sliced into rounds 4 clove Garlic 28 oz can Cento All Purpose Crushed Tomatoes4 cup Swanson Natural Goodness Chicken Broth 1 tsp crushed red pepper flakes1.5 tsp kosher salt0.5 tsp freshly ground black pepper to taste2 tsp franks hot sauce9 oz pkg Fresh Foods Market Delicatessen Four Cheese Tortellini 15.8 oz can Bush's Great Northern Beans, drained and rinsed5 oz Baby Spinach
Directions
In a large pot over medium heat, heat oil. Add onion and cook until tender and lightly golden, 6 minutes. Add chicken sausage and cook until sausage is golden, 4 minutes more. Stir in garlic, crushed tomatoes, chicken broth, and red pepper flakes and season to taste with salt and pepper.

Bring to a rolling simmer and add tortellini. Simmer 20 minutes.

Stir in white beans and spinach and cook until wilted, 1 minute.

Garnish with Parmesan if desired. (not included in nutritional profile)
