Judi's Tabbouleh

Ingredients
Mint Leaves, Fresh, 1.5 cup chopped Parsley, 1.5 cup choppedBulgar Wheat, 1 heaping cup Water, tap, 1 cup (8 fl oz) cold *Lemon Juice, .5 cup *Extra Light Olive Oil, 10 tbsp (2/3 cup)Onions, raw, .75 cup, chopped Garlic, 2 tsp Salt, .5 tsp Pepper, black, 1 tsp Red Ripe Tomatoes, 4 medium whole (2-3/5" dia) - seeded and cut into 1/2 inch diceCucumber (peeled), 1 large (8-1/4" long) - seeded and cut into 1/2 inch dice
Directions
1. Combine bulgar, water, lemon juice and 1/3 cup of the olive oil in a large bowl. Mix well, and set aside for 30 minutes at room temperature. Then fluff the mixture with a fork.

2. Add the min, parsely, red onion, garlic, pepper, salt and remaining 1/3 cup olive oil. Toss well with a fork.

3. Add the tomatoes and cucumbers and toss again. Adjust the seasonings if necessary and allow to stand, loosely covered, for at least 30 minutes for the flavors to come out.

4. Garnish with fresh mint leaves and serve.

Makes about 8 portions.
