Mediterranean Rice Salad

Ingredients
3 cloves garlic1 cup basmati rice (can substitute brown)1 lemon, juiced1 medium tomato, cored3 tablespoons olive oil1 cup cherry tomatoes, halved1 cucumber, seeds removed and sliced thinly1/2 cup radishes, sliced1 medium yellow pepper, chopped1 tablespoon capers, drained
Directions
Bring 4 quarts of salted water to boil in large pot. Add garlic cloves and cook until tender and remove. Add rice and cook like pasta until tender, about 15 minutes. Drain. Spread rice on a baking sheet to cool.


Make dressing by combining peeled boiled garlic cloves, medium tomato, lemon juice, and olive oil. Use a blender or immersion blender to puree. Season with salt and pepper to taste.


When rice is cool, combine in bowl with cherry tomatoes, cucumber, radishes, pepper, and capers. Add desired amount of dressing and mix salad until evenly coated.
