rice & tomatoes

Ingredients
2 cups cooked brown minute rice1 can diced tomatoes seasoned w/ oregano, garlic, and basil with juice (or any flavor you choose)Green onionsRed bell peppersYellow bell peppers2 tsp minced garlicsalt to taste1oz cheese optional
Directions
Cook rice according to directions. While rice is cooking in small pot mix everything else. Let cook until rice is done. I usually freeze my onions and peppers, so I cook until they are done. Drain tomatoe mixture, but leave approximately 2 tablespoons of the juice. When rice is done, mix with tomatoe mixture and juice. Serve warm. If desired top with cheese and let melt. Makes 4 1/2 cup servings
