Oven Roasted Sweet Potatoes

Ingredients
2 med-lg sweet potatoes, peeled and cubed1 Tbsp light butter w/ canola oil 1 tsp canola oil
Directions
Melt the butter and combine with canola oil and salt. Coat the sweet potatoes. Spread the potatoes in a foil lined baking sheet. Bake at 350 degrees for about 25-30 minutes or until tender.

    This is one of the best ways to cook sweet potatoes next to grilling. I toss them with a little olive oil, salt and pepper. Sometimes I add chopped red pepper (large dice), red onion, and chicken sausage and let it roast all together at 375. This is such a comforting dish and the taste is wonderful - 2/18/10

    I make a similar recipe to replace French fries. I peel and cut the sweet potatoes into steak fries, toss them gently with olive oil and salt, spread them on a cookie sheet and bake at 350 for about 15 minutes per side. Better than French fries! - 8/10/07

    I try to avoid unnatural, genetically modified foods, so I subbed olive oil for the canola oil and canola oil butter. I used a dash of nutmeg and a generous amount of cinnamon. It actually took about 60 minutes to get the cubes tender in my oven, but they turned out great! - 1/13/13

    I used extra virgin cold-pressed coconut oil and a bit of organic butter instead. More calories, but I enjoy the health benefits of these, plus coconut oil adds a subtle, sweet flavor. These are versatile because you can add seasonings to make sweet or savory. - 12/27/12
