White Bean Chicken Chili

Ingredients

1/2 quart pot of water1/2 bag dry beans1/2 med onion2 tablespoons of Olive Oil3 breast of chicken1 bell pepper1/2 onion1 zucchini1 cup of carrots 1 potato med2 celery stalks2 jalapeno peppers1 can of cream of chicken soup1/2 teaspoon of Italian herbs, season salt, garlic powder, garlic pepper, chives, chili powder
Bring water to a boil with rinsed white beans add 1/2 chopped onion, 1 tablespoon of Olive oil.
Boil until beans are tender (watch for evaporated water) add more water when needed.
In a skillet:
Sautee: cubed chicken, 1/2 onion, chopped bell pepper, and all herbs and spices
Cube Zucchini, carrots, celery--set aside
When beans are soft and tender--add cooked chicken from skillet, season salt to taste
Add cubed vegetables, and 1 can of cream of chicken
Simmer until vegetables are cooked
