0.05 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 1 tsp Curry powder 0.25 tsp Turmeric, ground 0.25 tsp Cumin seed 0.25 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 0.25 cup slices Cucumber (with peel) 0.25 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips 0.1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
Mix 4 oz can of coconut milk with spices. Cook 1 cup dry quinoa according to package directions and cool thoroughly. Add 1/2 cup each diced cucumber, red onion and yellow pepper to prepared quinoa. Add dressing and stir to coat. Serve chilled in half an avocado over a bed of greens. Top with goat cheese if desired.
