Cream Of Asparagus Soup (Dairy Free)

2 Cups Asparagus, Fresh2 tbsp Olive Oil 1 small Onion diced2 clove Garlic, minced1.5 cup Chicken stock, home-prepared 1 Tbsp Cashew Nuts, Raw1 Tsp Sea Salt1 tsp Pepper, black 1/2 cup Coconut Milk
Preheat oven at 375 degrees. Place cleaned asparagus in a mixing bowl with the garlic and onions on a nonstick baking sheet. Dash it with salt and pepper. Roast the asparagus, onions, and garlic for 8-10 minutes or until roasted (but not over done).
In a blender place 1/2 cup chicken stock in a high powered blender (like a Ninja or Vitamix). Add in cashews and blend until smooth.
Add in the rest of the chicken stock and the coconut milk. Cut asparagus into smaller pieces after removing from the oven. Place the asparagus, onion, and garlic in the blender and blend until smooth. Add in salt and pepper. Blend on high until pipping hot to serve or place in a sauce pan and heat through to serve.
