LOW CARB ITALIAN CHICKEN SALAD

* Chicken Breast, no skin, 1 breast, skin removed * Parmesan Cheese, grated, .25 cup * Olive Oil, .25 cup Lime juice - 1 squeeze * balsamic vinegar, 1 tablespoon * Red Ripe Tomatoes, 1 large whole * Onions, raw, 2 tbsp chopped * 1/2 Cucumber (peeled) * Oregano, ground, 1 tsp * Salt, 1 dash * Pepper, black, 1 dash * Garlic, 1 clove * Black Olives, 5-7 * Romaine Lettuce (salad), 2.5 cup, shredded
Chop the onion, and garlic. Create a marinade by mixing in the olive oil, balsamic vinegar, oregano, lime juice, salt and pepper. Use HALF of the marinade and let the chicken sit overnight.
Grill the chicken. While chicken is cooking, chop the lettuce, tomatoes, cucumber and olives (or can be left whole). Mix the remaining half of the marinade and parmesan cheese with the lettuce.
Cut the chicken into strips when fully cooked, and top the salad. A little extra parmesean and olive oil can be used on top of the chicken for a super good taste!!!!
