Spanish Rice Dish

Ingredients
2 Chicken Breasts- no skin1 Cup Corn and Black Bean Salsa2 Packages of Spanish Rice1 Cup Cheddar Cheese- ShreddedSour Cream- optionalTortilla Chips- Optional
Directions
Preheat oven to 425.
Cut up chicken in to cubes and cook in a frying pan with a little bit of olive oil and water.
While cooking chicken, also prepare the rice in a saucepan.
When rice and chicken are done combine Rice, Chicken, and Salsa in a cassarole dish.
Put in the oven uncovered for 30 minutes. Take out of the oven and put the cheese on the top and place back in the oven for an additional 10 min, or until cheese is melted.
Serve with Sour Cream and Tortilla Chips
