Ritz Crusted Chicken

Ingredients
10 oz Tyson boneless, skinless chicken breast 3 serving Nabisco Ritz Crackers (5 crackers) 1 large Egg, fresh, whole, raw 1 tbsp Butter - Country Crock plus Calcium
Directions
1. Preheat the oven to 375 degrees.
2. Cut chicken breast into 5oz cutlets.
3. Cover one cutlet with plastic wrap, pound with the bottom of a pan until it is 1/4inch thick. Repeat with the other cutlet.
4. Beat an egg in a shallow bowl.
5. Place 1 Ritz crackers in a bag and crush into crumbs. Pour into another shallow bowl.
6. Dip each cutlet in the egg, then roll thoroughly in the ritz crackers until coated.
7. Place the cutlets on a greased baking dish and sprinkle some more crumbs over the top.
8. Place a couple thin slices of butter on top of each cutlet.
9. Bake for 35 minutes.

Serve with your favorite veggie side dish!
