Cauliflower "Grits"

3 cup Cauliflower, raw, riced3 slices thick cut bacon1/4 cup heavy cream1 cup water6 tbsp Butter2 cup Cheese shredded, cheddarsalt and pepper to taste
cook bacon in a large frying pan until crispy, remove and drain on paper towel and crumble when cool
Add butter to pan drippings until melted
Add cauliflower and saute for 5 minutes, add water and cream and simmer until cauliflower is soft but not mushy
add cheese and stir until melted and bubbly on low
divide into three bowls and sprinkle with bacon
