Avocado Dark Chocolate Mousse

1 fruit without skin and seeds Avocados, California (Haas) 2 tbsp Cocoa, dry powder, unsweetened 2 tbsp Smuckers Sugar Free Red Raspberry Preserves-2 net carbs 1 tsp Raspberry Extract (by JAZZYDOC) 1 tbsp Erythritol, powdered-adjusted to 0 NC (by LIVESIMPLY1)
Halve, peel and pit the avocado. Add the avocado halves, fruit spread (with no added sugar), and cocoa powder to a food processor.
2Cover and puree until fluffy and velvety smooth. Adjust amount of fruit spread or cocoa powder to taste, if desired.
3Transfer the “mousse” to juice glasses or small dessert dishes. Chill in the refrigerator, then serve. (Optional garnish: fresh raspberries.)
