Quick Salmon Salad

Ingredients
12 oz (2 cans) canned pink salmon, boneless/skinless, drained well4 hard boiled egg whites, chopped1 tbsp capers, drained1 cup diced raw zucchini3/4 cup finely diced raw red bell pepper1 tsp lemon juice4 tbsp fat free mayonnaise1 tbsp yellow mustard2 tbsp chopped walnutsblack pepper to taste (I used 1/2 tsp of the new McCormick's Smokehouse flavor and it was awesome!)
Directions
Flake the drained salmon into a medium bowl. Stir in all of the remaining ingredients and mix until combined. Really good over some crunchy romaine lettuce or on whole grain crackers.

Makes 4 servings, about 1 cup each.
