Pesto Salmon & Couscous

2 tbsp Parmesan Cheese, grated 8 tbsp Basil 2 1tsp Olive Oil 1 tbsp Pine Nuts 2 cup, cooked Couscous 1 serving Garlic (1 clove) 1 cup Tomatoes - sm cherry tomatoes 10 oz Wild Alaskan Salmon
1. Blend the basil, pine nuts, olive oil, and parmesan cheese
2. Cook couscous according to package directions
3. Bring a nonstick skillet to medium high heat, add a bit of olive oil to the pan
4. De-skin 2 salmon fillets and add to the pan. Cook on 3min per side and remove from pan
5. Add cherry tomatoes to pan, turn down to medium, and sautee for 3min
6. Add the pesto saice and salmon to the pan and cook for 3 more min
7. Place a cup of couscous on each of 2 plates, top with a fillet, half the tomatoes and pesto
