Creamy Potato Soup

Ingredients
2 stalks celery, chopped 8 baby carrots, chopped 4 medium Russet potatoes, diced 4 cups Simple Truth Organic Vegetable Broth 2 cups Simple Truth Unsweetened Almond Milk 1/4 - 1/2 t. white pepper .5 tsp Pepper, white
Directions
1. Saute celery and carrots in non-stick pan. (Optional -- add a bit of onion or garlic, if desired.) 2. In a pot, combined veggies, diced potatoes, and broth. Cover and simmer 15-20 minutes. 3. Let the soup cool, then blend it in the Magic Bullet. Return to pot. 4. Add pepper and milk, and heat. Serving Size: Makes 6 servings, 1 1/2 c. each
