Healthy zucchini lasagna boats

Ingredients
0.5 tbsp Basil0.25 cup great value riccotta cheese part skim0.5 cup gia russ no salt added low sodium tomato basil pasta sauce6.2 oz zucchini squash0.25 cup kraft fat free mozzarella cheese
Directions
Cut the zucchini length wise. Scoop out inside to make a well for stuffing. Mix the riccotta, spinach and 1 Tbsp of mozzarella. Add it as bottom layer to both zucchini halfs. Then add the sauce and top with remaining cheese. Bake at 400 degrees covered for 30 minutes. Uncover and bake for an additional 5 minutes until cheese is melted and zucchini is tender. Serving Size: 1
