Pumpkin Banana Applesauce Cake

¾ cup oat flour (I grind my own from oatmeal)Whole Wheat Flour, 1/2 cup¾ cup brown rice flour – cal 390, fat 3, Fiber 6 1 cup plus 2 Tbsp cake flourGranulated Sugar, 3/4 cup½ cup equal Baking Soda, 1 tsp Salt, 1 tsp Egg, fresh, 6 large whites unsweetened applesauce, 16 tbsp Pumpkin, canned, without salt, 1 cup Banana, fresh, 1 medium (7" to 7-7/8" long) ToppingGranulated Sugar, 1/3 cupBrown sugar 1/3 cup *Flour, white, 2/3 cup plus 2 oz*applesauce, unsweetened 4 tbsp
mix all dry ingredients except 2/3 cup plus 2 oz flour, 1/2 cup white and ½ cup brown sugar and 4 tbsp applesauce. Then add all wet ingredients with the same exceptiong above.
grease and flour pan
pour batter in pan
combine remaining flour, sugar, applesauce and turn into a crumble mixture. Sprinkle over top of batter.
Bake at 350 for apprx 45 minutes
makes 24 2 oz servings
