Rich Cocoa Custard

Ingredients
1/3 cup brown sugar 1/4 cup unsweetened cocoa 3 tbsp cornstarch 1/4 tsp salt 2 cups fat free, unsweetened plain soymilk (I use SoGood Trim)1 tbsp vanilla extract
Directions
In a large, microwave - safe dish, combine brown sugar, cocoa, cornstarch and salt until well mixed.
Stir in soymilk until smooth.
Microwave, uncovered on high for 3 minutes, whip well with a whisk.
Microwave 4-6 minutes, until thickened.
Stir well after each minute.
Stir in vanilla.
Pour into individual serving dishes and refrigerate until chilled before serving.
