For the Crust (double this section; one for bottom and one for top): 1 cup + 2 tbsp Whole Wheat Flour 1/4 tsp Salt 2 tbsp unsweetened Applesauce1/4 cup I can't Believe It's not Butter, Light4-5 tablespoons ice waterFor the Filling:8 cups thinly sliced apples1/2 cup honey1.5 tbsp whole wheat flour1 tbsp cinnamon (more or less to taste)1/4 tsp nutmeg1 tbsp lemon juice
For the Crust:
1) Spray a 9-inch pie plate or skillet and set aside.
2) In a large bowl, combine one serving of the flour and the salt. Add the applesauce and butter until the mixture resembles a coarse meal.
3) Gradually add enough ice water to the mixture while mixing with a wooden spoon until a ball of dough is formed.
4) Pour the dough onto a lightly floured sheet of plastic wrap and form into a disc. Lightly flour the top of the pie dough and place another sheet of plastic wrap on top. Rolling from the center, roll until the dough is about a ⅛-inch thickness.
5) Remove the top piece of plastic wrap. Lay across the pie plate and remove the bottom piece of plastic wrap. Press the pie dough lightly into the bottom and sides of the pie plate. Cover the pie plate with a piece of the plastic wrap and place in the freezer for at least 30 minutes to overnight.
6) Repeat steps 2-4 with the second set of crust ingredients. Place prepared dough on a plate with the plastic wrap still on and place in the freezer for at least 30 minutes to overnight
For the Filling:
1) Preheat oven to 400F.
2) In a large bowl, gently mix filling igredients.
3) Spoon into crust-lined pie plate. Top with second crust. Wrap excess top crust under bottom crust edge, pressing together to seal. Cut slits (or shapes) in several places in the top crust.
4) Bake 40-45 minutes, or until apples are tender and crust is golden brown. Cool on cooling rack about 2 hours before serving.
