Mushroom & Truffle Cauliflower Pizza

285 grams Cauliflower, raw .5 cup Parmesan Cheese, grated 9 oz Mozzarella Cheese, part skim milk 1 tsp Pink Himalayan Sea Salt (Evolution Salt Co) (by TAMMAGDALENO) 1 tsp Pepper, black 3 large Egg, fresh, whole, raw 8 oz Botticelli tomato & basil sauce (1/2 cup=120 g) (by MOM2WILDBOYS) 115 gram king trumpet mushrooms (by GR33NLEOPAR49) 1 tbsp White Truffle Oil, La Tourangelle (by TIMKIHM)
- preheat oven to 450 degrees
- put cauliflower in food processor
- squeeze out water
- add cauliflower, 3 oz mozzarella cheese, 1/2 cup parmesan, eggs, salt and pepper and combine well
- create a ball and push into a 1/2 sheet pan, creating a flat layer
- bake for 18-20 min, remove from oven and let rest 20 min
- spread tomato sauce, additional mozzarella cheese, truffle oil, and mushrooms
- bake for 15 min, remove and let rest for 5 min, cut and serve
